Mandarin Salad

The mandarin oranges may be omitted for serving with Pan Seared garlic basil Salmon and a raspberry vinaigrette.


  • Start with "Fancy greens" salad mix bag or make your own blend with Red Leaf Lettuce, Romaine and Spinach
  • Fresh tomatoes
  • One small can of mandarin oranges in juice, Dole is a good brand but any brand will do.
  • Mandarin orange juice from the can of oranges used in this recipe, use about 1/2 cup
  • Red wine vinegar or vinegar of choice, About 1/4 cup
  • Olive oil, 1/4 cup or less
  • Soy Sauce, 1 tablespoon (or 1/2 teaspoon salt)
  • Black pepper, 1 teaspoon
  • Walnuts (or sliced Almonds), About 1/2 cup



  1. Start your salad with greens, tomatoes sliced then quartered to get quarter slices and  put into fridge for now.
  2. Make the dressing by mixing mandarin orange juice, vinegar, olive oil, soy sauce and black pepper.
  3. Spread mandarin oranges over the salad and sprinkle the salad lightly with vinegar to keep it fresh.
  4. Apply the nuts to the top of the salad and serve with the dressing in a dispenser or like I do, a measuring cup and fork to stir it! Either way it's best when the dressing is applied when served.
  5. This salad goes best with Grilled Salmon or seafood but can also be served with BBQ or roasted chicken.
